More than ever before, vegetables took prime real estate on our plates this year. They replaced meat in comfort food dishes, brought our backyard barbecues into modern times, and even rivaled turkey as the main dish at Thanksgiving. We experimented with new ways of prepping them, cooking them, and serving them, and we’re not planning on slowing down in 2020.
The recipes below show off some of the most creative ways we played around with vegetables over the past year, from layering them into lasagna to boiling them in a butter bath. If you didn’t get to make all of them this year, don’t fret. They’ll still be good in January.

Roasted zucchini planks replace noodles in this gluten-free lasagna, which — don’t worry —doesn’t skimp on cheese. The garlicky, deeply flavored four-ingredient sauce couldn’t be easier, but if you’re pressed for time you can swap in a store-bought marinara.

We created this recipe as a showstopping vegetarian alternative to a Thanksgiving turkey, but that doesn’t mean you have to wait until next year. 3. Smoky Ranch Dip with Charred Kale
We tossed practically every vegetable onto the grill this year, and with great success. When placed over flames, kale becomes wonderfully charred and crackly, making it a delicious add-in to a cool and creamy dip. Serve with your favorite raw veggies as crudités.

4. California-Inspired Vegetarian Paella
Paella is typically packed with seafood and meat, but this vibrant version is filled with a variety of vegetables instead. The summer squash is cooked directly with the smoky saffron-flavored rice, and the rest — tomatoes, avocado, and lots of fresh herbs — are piled on top before serving.

5. Pulled Mushroom Barbecue Sandwiches
This plant-based twist on pulled pork will satisfy vegetarians and meat-lovers alike. Although they’re obviously at home during backyard barbecues, they’re so saucy and hearty that they’d be equally welcome during colder winter months.

6. 5-Ingredient Creamy Corn Bucatini with Burrata
This five-ingredient, 15-minute meal is exactly what you crave come summer. The “creamy” sauce doesn’t actually contain any cream — it’s made by sautéing fresh corn kernels in butter, then simmering them with the pasta’s starchy cooking water. Sprinkle more fresh corn on top for extra pops of sweetness and crunch.

7. Easy Cauliflower Pizza
A lot of cauliflower pizza recipes are complicated — asking you to start with a full head and turn it into dough. Or the resulting crust is bland, or soggy. Not this one. Starting with already riced cauliflower makes it super quick, and a few smart steps ensure it’s crispy through and through.

8. Broccoli Reuben Sandwich
Inspired by one of our favorite sandwiches at Brooklyn-based sandwich shop Court Street Grocers, this veggie twist on the classic Reuben boasts all the flavors, sans the corned beef. The secret sauce is a simple mix of mayo and Sriracha, but it really makes this sammie shine.

9. Hot Honey Butter Bath Corn
This recipe introduced us to an entirely new way to cook our vegetables. In fact, this spicy corn was such a hit with both our readers and our staff that we’ve started dunking other favorite veggies in butter baths, from sweet potatoes to Brussels sprouts.
