This Asparagus Quiche is perfect for spring when asparagus is in season. But also rather delightful all year long with smokey bacon and shredded Gruyère and Parmesan cheeses.

A simple, classic quiche your guests or family will love with its creamy custard and distinct flavor.

Gruyère Cheese in Asparagus Quiche

I’ve added Gruyère cheese to this recipe because I absolutely love the creamy, nutty, almost sweet flavor it brings to the quiche.

Here’s a little history on Gruyère. Named for the town of Gruyères in Switzerland where it was originally made, it’s a firm cheese that’s rich and creamy. It melts well and gives dishes a distinctive flavor.

However, it can sometimes be tricky to find. I often locate mine at Trader Joe’s. But by all means, substitute your favorite cheese instead if needed. Good options would be Swiss, Asiago, or even a White Cheddar cheese.

A cornerstone brunch and afternoon tea recipe, quiche is a perfect and always favorite choice for both. But don’t limit yourself only to brunch. Quiche also serves well for breakfast, lunch, or a light dinner with greens.

Ingredients for Asparagus Quiche

This quiche recipe requires:

  • Pie Crust – While you can make your own, and admittedly, there is nothing quite like a homemade pie crust, store-bought crusts are simple and save time. In this recipe, we are not blind-baking the crust.
  • Milk – For the best tasting quiche, use higher fat milk like half-and-half, whole milk, or even 2% milk.
  • Eggs– Use 5 large eggs.
  • Produce – You will need one cup of fresh asparagus chopped into 1-inch pieces. Choose skinny to medium size asparagus. You will also need a couple of green onions, chopped.
  • Seasoning – This quiche is seasoned with salt, pepper, and garlic powder. Be careful with the salt as the bacon will contain plenty.
  • Bacon – You will need about 4 slices of bacon, cooked and chopped. While you can buy pre-cooked bacon, freshly cooked bacon is always the most delicious.

How to Make Asparagus Quiche in 4 Steps

Now that you have a list of ingredients needed for this quiche, here’s how easy it is to make it.

  1. Begin with a premade pie crust – As mentioned earlier, we are not blind-baking this crust. Unroll a pie crust and fit it into a deep-dish 9-inch pie plate and crimp the edges.
  2. Add-Ins – Begin by layering the shredded cheeses on top of the pie crust. Then top with chopped asparagus, cooked bacon, and green onions.
  3. Combine Eggs, Milk and Seasoning – In a separate bowl, whisk together the eggs, milk, and seasoning. Pour the custard over the vegetables in the pie crust.
  4. Bake – Preheat the oven to 425° and bake the quiche for 15 minutes. Then without opening the oven, reduce the heat to 325° and bake until the eggs are set in the middle, about 20 to 25 minutes more. Be sure to keep an eye on the crust and cover the outside ring if necessary.

Let it cool before slicing and serving.

Absolutely! There are two ways to make quiche ahead.

First, once it’s baked, cool the quiche for up to two hours on the counter, and then refrigerate. To reheat, cover the quiche with foil and bake at 325°F until just heated through.

You can also freeze a quiche. Simply cool completely and then cover tightly first with plastic wrap followed by a couple of foil layers. Freeze for up to 3 months.

To skip the crust, generously grease the pie plate first. Then add the vegetables and pour the egg mixture over the top.

Bake until the eggs are completely set throughout the center.

Ingredients

  • Refrigerated store-bought pie crust
  • 1 cup milk
  • 5 eggs, slightly beaten
  • 1/4 teaspoon each salt and pepper
  • 1/4 teaspoon garlic powder
  • 4 slices bacon, cooked and crumbled
  • 1 cup shreddedGruyèrecheese (or cheddar, swiss, asiago, etc.)
  • 1/4 cup grated Parmesan cheese
  • 1 cup asparagus, chopped
  • 2-3 green onions, sliced thinly

Instructions

  1. Preheat oven to 425°F. Line a 9-inch pie plate with store-bought pie crust and crimp the edges.
  2. In a medium bowl, whisk milk, eggs, salt, and pepper. Set aside.
  3. Layer cooked, crumbled bacon, Gruyère and Parmesan cheeses, chopped asparagus, and scallions in the crust-lined pie plate. Pour the egg mixture over the top.
  4. Bake 15 minutes in the oven at 425 degrees. Reduce the oven temperature to 325 degrees and continue to bake for another 20 to 25 minutes, or until a knife inserted in the middle comes out clean. Cool 10 minutes before cutting into wedges.
