This version of bread pudding only has 4.4g of net carbs per serving.
You can add more spices of your choice to play with flavors. It’s a very versatile recipe.
It’s not only keto but also vegan friendly.

Instructions

  1. 1. Mix together flaxseed meal and water, put it aside to set.
  2. 2. Preheat the oven to 375F/190C
  3. 3. Pour the milk in a saucepan, bring it to boil and add the coconut oil and turn off the heat.
  4. 4. Mix the cubed bread with milk and let it sit for 10 minutes.
  5. 5. Blend the sweetener with the “eggy” flaxseed mixture from step 1.
  6. 6. Combine it with bread and milk until all ingredients are mixed evenly.
  7. 7. Pour in the “dough” into a greased baking dish and bake for 20-30 minutes.
  8. 8. Cool for 5-10 minutes and serve right away.
