How many cookies does this recipe make?

This recipe makes about 2 dozen cookies depending on how big you make them. I usually try and make them on the smaller side and I never have trouble getting 24 cookies per batch.

If you like to make your cookies bigger you can definitely do that there will just be less cookies in each batch.

I almost always double the batch because we eat some and give some away or share them during holiday parties so it’s a good idea to make extras if you want! That said, if you just want to make a few cookies you can easily cut the recipe in half as well.

Is there pumpkin in these cookies?

Absolutely. We’re using pure pumpkin puree which you can get from a can or you can make your own with this tutorial.

Including pumpkin not only gives these cookies a great flavor it also adds nutrients and moisture. Pumpkin is loaded with vitamins, minerals, and antioxidants which makes it a sneaky great addition to baked goods and other recipes that might not be very nutritionally dense!

The pumpkin also gives these cookies a great texture since it keeps the cookies soft and moist. It’s an all around great addition to most baked goods if you like pumpkin flavor.

Can these pumpkin cookies be made gluten free?

You can absolutely make these pumpkin spice cookies gluten free. I would recommend using a mix like this in place of the regular flour.

The King Arthur gluten free baking flour is great for making all kinds of great baked goods and it replaces regular flour really nicely so you shouldn’t have any problems with texture, baking time, or moisture levels.

There are other gluten free baking blends out there that work really well too. I’ve used the Pillsbury one, as well as the Bob’s Red Mill one and they are all really nice to cook and bake with so don’t get too hung up on which one you grab.

What do I need to make these delicious fall cookies?

This recipe uses flour, butter, sugar, brown sugar, eggs, vanilla, pumpkin puree, pumpkin spice, baking powder, baking soda, and salt. Pretty standard ingredients for a cookie recipe with the addition of our pumpkin additives.

You will also need some pumpkin spice and white sugar for rolling the cookies in before they are placed on the sheets and popped into the oven.

Begin adding the flour, one cup at a time, and mix until everything is incorporated.

Cover the dough and refrigerate for 90 minutes.

In a small dish, mix the sugar and pumpkin spice for rolling.

Using a small spoon or a cookie dough scoop, make small balls of dough and drop them into the pumpkin spice sugar. Roll the balls around in the sugar mixture until all sides are evenly coated.

Place the cookies on a cookie sheet about 2” apart.

  • 5 cups of flour

  • ½ cup of packed brown sugar
  • 2 eggs
  • ½ cup of pure pumpkin puree
  • 1 teaspoon vanilla
  • 1 tablespoon of pumpkin spice
  • 1/2 teaspoon of baking powder
